Karela ko Achar - Nepali Achar Recipe
today I am here with bitter gourd's pickle recipe this is very easy to make and healthy too Let's get started with the ingredient's 600 grams bitter gourd, cut in long pieces half spoon turmeric half spoon fenugreek seeds and two red dried chilly salt as per taste red chilly flakes fried and grounded cumin powder of Nepali hog's plump if you don't have this then use lemon juice half cup green coriander sesame, fried and grounded 1 red onion long cut 3 spoon oil heat the pan 800 ml water for 600 gram bitter gourd you can increase or decrease as per bitter gourd's quantity when water starts boiling, add bitter gourd and stir a bit our heat must be high after stirring well, cover it and cook it for 20 minutes cover the lid by doing this, bitterness will fade away let it boil for 20 minutes after 20 minutes when cooked, color changes let's check if it's cooked or not. it is cooked well take it out and keep it in a big bowl take out the remaining bitter gourd Now, we will add all our spices onion fried and grounded sesame seed salt as per taste red chilly flakes fried and grounded cumin powder of Nepali hog's plump if you don't have this use lemon juice heat the pan and add oil when oil heats up, add fenugreek seeds when seeds are burning black add 2 dried red chilly turmeric after few seconds, add hot oil in the bitter gourd when doing this make sure to coat all spices roughly chopped coriander mix it well if you want, mix it with clean hand you can serve it as you like it is very tasty ! if you feel bitterness add more lemon juice make it like this at home and enjoy this with friends and family .
